Someone turned down the thermometer across the country and the only thing that is helping me out is coming home to my Snuggie and a bowl of something hot and delicious. My mother’s favorite go-to chicken and dumplings were the only thing on my mind this weekend and here’s the recipe so you can warm up from the inside out.

Delicious and soul-soothing, this pot pie is one to write home about. If you are short on time it is just as delicious with pre-made chicken. Make it your own by adding different veggies and spices!

Tuesday Night Special: Pepperoni and Chicken Pasta
Pepperoni has got to be my absolute favorite topping on pizza that I order in (when I make it myself I pancetta and sundried tomatoes win hands down.) So I decided, if it’s good on pizza, it has to be good with pasta–and I was correct. This dish is crazy fast–which is perfect for a Tuesday evening. You can bulk it up with the addition of grilled chicken, or prepare it with just the pepperoni. Enjoy with a mixed salad and crusty Italian bread.

Ingredients:
4 tablespoons olive oil
4 thinly sliced boneless and skinless chicken breast, cut into 1-inch strips
Salt and ground black pepper
1 small onion, chopped
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 (28 ounce) can crushed tomatoes
2 sun-dried tomatoes (from an 8 ounce jar), chopped
1 teaspoon paprika
8 ounces pepperoni, sliced
2 tablespoons chopped fresh flat-leaf parsley
1 (16 ounce) package dried pasta (penne, rigatoni, garganelli)
Grated Parmesan cheese
Honey Glazed Fried Chicken
No this recipe isn’t 50 Million Pound Challenge approved, but a sister had a request for it from a really good friend in crisis–who am I to say no to a friend in need? This is my delicious version of the honey glazed fried chicken that I order at my favorite cheap eats restaurant in the city–it’s sticky, and super delicious. I usually serve it with buttermilk waffles for brunch, but eaten alone is just as good. Enjoy…in moderation.
