Someone turned down the thermometer across the country and the only thing that is helping me out is coming home to my Snuggie and a bowl of something hot and delicious. My mother’s favorite go-to chicken and dumplings were the only thing on my mind this weekend and here’s the recipe so you can warm up from the inside out.

Potato Pancakes (Latkes)
This past Friday marked the beginning of Hanukkah and in true Get ‘Em Girl fashion, I marked the holiday by trying my hand at the delicious recipe for Potato Latkes that I saw in my Parties issue of Fine Cooking…delicious! The recipe is a little more labor intensive than most that I’ve seen, including the one submitted by Elita during our KitchenAid giveaway, but it was worth it…so worth it.

Green Beans with Caramelized Red Onions
I love my mama’s green beans, she cooks them down with smoked turkey until the green bean is no longer recognizable…good for the soul, but not for the nutrients. So, I wanted to make an equally delicious green bean but keep some of the vitamin C. This side dish is perfect for your holiday or weeknight meal because it super easy and fast.

Roasted Red Potato Salad with Pesto
I was browsing through my cookbook collection, trying to come up with a delicious side dish for Sunday dinner, and this dish popped out at me from Vegan Soul Kitchen by Eco Chef Bryant Terry. I had all the ingredients except for pine nuts and miso…but I did have a jar of pesto sauce that I had yet to finish. With a few variations, I made it my own and it turned out superdelish and perfect for anyone looking for an earthy and nutty version of the mayo-laden traditional potato salad.
